Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: All containers on the drying rack stored above the 3 compartment sink observed with food debris affixed to either the inside , outside or both. I removed all containers so that they can be re washed (PIctures taken).
Trays that dough is stored on not properly cleaned and food debris observed affixed to many trays (Pictures taken).
Soiled blue wiping towel observed on counter. This was discarded
Soiled knives observed on knife holding rack. These were removed.
Correction: Ensure staff are trained on how to properly presoak, prerinse and prescrape when warewashing
Rewash and sanitize all containers, trays/knives etc
Unless premises provides a written food safety plan on how the blue wiping cloths are to be sanitized when not in use or after use, the towels are to be used only once then discarded
