Observation:
THIS IS A REPEATED VIOLATION.
No liquid soap available in dispenser at hand washing station outside of walk-in cooler.
Corrective Action(s):
Refill liquid soap in dispenser at hand washing station outside of the walk-in cooler. Ensure all hand washing stations are fully equipped with liquid soap, paper towels and hot/cold running water at all times. Also ensure to have garbage bins located reasonably close to each hand sink.

Observation:
THIS IS A REPEATED VIOLATION.
- Several food items in walk-in cooler uncovered.
- Ladles stored directly in food in walk-in cooler and walk-in freezer.
- Scoops stored directly in flour bins.
Corrective Action(s):
Ensure all food is covered and protected from contamination with a food-grade cover.
Do not store scoops directly in food as the handle may be contaminated and may potentially contaminate the food.

THIS IS A REPEATED VIOLATION.
General sanitation of facility still requires improvement, especially in the following areas:
- Outside of all storage bins.
- All storage racks and storage areas.
- Hard to reach areas (including behind equipment, under sinks, under shelves, etc.).
- Inside propellers of dishwasher.
Corrective Action(s):
Deeply clean throughout the facility. Review your sanitation plan for daily and weekly cleaning with all staff.

Temperature of large prep cooler (located closer to walk-in cooler) = 11.9 degrees Celsius.

Service large prep cooler to ensure temperature is maintained at or below 4 degrees Celsius. Do not store any potentially hazardous foods in this cooler until receiving written confirmation from the Health Inspector.

- Hand sink upon kitchen entry has been replaced with a new basin.
- Prep cooler beside hand sink (upon kitchen entry) has been replaced with a small prep cooler.
- Ambient temperature of small prep cooler = 3.9 degrees Celsius. Potentially hazardous foods may be stored in this small prep cooler.
- Concentration of chlorine (bleach) sanitizer in spray bottle = 200 ppm.
