A deep and thorough cleaning of the entire slicer is required to remove all meat and grease from the entire unit.

- Hand sink had liquid soap, paper towel, hot and cold water
- Spray bottle had 200 ppm quats, make sure to keep spray bottle in the kitchen area.
- Dishwasher had a final rinse of 74 C at the plate and 82 C at the gauge.
- No signs of pest activity noted during inspection
- General sanitation is satisfactory.
