Observation (CORRECTED DURING INSPECTION):
The Quats sanitizer in the spray bottle was 0ppm. The Quats strength is too low to kill bacteria, and therefore surfaces are not being sanitized.
Corrective Action(s):
Immediately fill spray bottle with new Quats solution. The solution should be changed daily, or at least every 2-3 days so the strength remains at 200ppm. During the inspection, staff filled bottle with fresh Quats solution.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; thermometers present; and temperatures monitored but not recorded.
- High temperature dishwasher rinse cycle was 73.6C at the plate's surface as per max/min thermometer.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.
- All food stored in food grade containers; covered; date coded; labeled; stored in groups (deli meat, cheeses, etc.); and 6" off the floor on racks or shelves.
- A stand alone, refrigerated, Komucha dispensing unit present. Cooler was 4C. Please a thermometer inside the cooling unit to ensure it maintains 4C at all times.
- No expired foods for sale or in use. FIFO rules being followed.
- General sanitation level is good.
- No signs of pests.
- FoodSafe certified staff present.
