Observation (CORRECTED DURING INSPECTION): No sanitizer at the time of inspection. Operator produced 200 ppm chlorine sanitizer.

Observation (CORRECTED DURING INSPECTION): The hand washing station in the kitchen did not have single use paper towels at the time of inspection. Operator resupplied single use paper towels at the time of inspection.

Observation: 1) Raw proteins (beef) kept on top shelf over multiple salad ingredients. Operator relocated raw proteins to the bottom shelf and washed the vegetables.
2) Rice scoop was observed to be kept in a warm water bath of 20C. Operator clean and sanitized the rice scoop and reported that the rice scoop will be kept under dry conditions from now on.
3) Food found on floor. Operator relocated food items on to dry storage shelves
4) Black mold found to be growing on walk in cooler inner walls.
5) Knives observed to be kept in crevices.

5) Clean and sanitize knives and store them in a sanitary manner.

Observation (CORRECTED DURING INSPECTION): Frozen raw proteins (shrimp and pork) were observed to be thawing in room temperature and measures at -4C. Operator reports the two items were moved out of the freezer 30 min ago. Operator relocated both items into the walk in cooler for proper thawing practices.
