Observation (CORRECTED DURING INSPECTION): 1) One bucket of chopped lettuce stored at room temperature for several hours. All cut vegetables and fruits must be stored in coolers under 4C. All potentially hazardous foods must be stored this way as well.
2) Bean sprout stored at room temperature above prep cooler.

6)Knife block used for knives at back of kitchen needs to be removed. Knife magnets on wall must be used as knife blocks cannot be maintained in sanitary condition. This item has never been cleaned and sanitized as mentioned by operator.
