Observation (CORRECTED DURING INSPECTION): Raw meats held at 8.7C in prep cooler.(min/max probe). Potentially hazardous foods must be held at <4C in order to prevent the growth of pathogens.
Corrective Action(s): Operator moved raw meats into walk in cooler that was operating at <4C. Potentially hazardous foods must not be held between 4-60C for >2hours.

Observation (CORRECTED DURING INSPECTION): No sanitizer immediately available for sanitizing food contact surfaces. Sanitizer used at end of night only.
Corrective Action(s): Operator mixed up 3 buckets of chlorine bleach solution at 100ppm for soaking cloths. Chlorine solution must be changed <4 hours to maintain concentration. Alternatively , use chlorine bleach solution in spray bottles at 100ppm and label bottles. Bleach solution must be used as part of routine cleaning

Observation (CORRECTED DURING INSPECTION): Handsinks in kitchen are not well equipped. Other handsink had soap, no paper towel and was not immediately accessible due to a hose attachment. Handsinks must be stocked and accessible for staff to facilitate frequent handwashing
Corrective Action(s): Ensure that all handsinks are equipped with liquid soap, paper towel and are accessible at all times.

Observation: Observation #1 - Build up of debris and grease observed below deep fryers and flat top, especially along floor-wall interface. Debris and grease will attract pests
