Observation: Observation #1: Two spray bottles for sanitizing surfaces. One spray bottle had 0ppm of chlorine bleach, while other had 200ppm of chlorine bleach. 100ppm (½ tsp in 1L of water) is required to sanitize food contact surfaces and reduce the number of pathogens to an acceptable level. At the concentration of >200ppm and rinsing with water is required after application.

Observation #2: Three compartment sink for warewashing and no dishwasher. Operator does not use any sanitizer in the third compartment sink. Sanitizer is required as part of manual dishwashing.
1) Scrape clean any gross debris and food residue
2) Wash in first compartment sink in detergent solution at temperature of >43C
3) Rinse in second compartment sink in clean potable water at >43C
4) Sanitize in third compartment sink = 50ppm chlorine bleach for 7 seconds
5) Air dry
Test sanitizer concentration frequently
Corrective Action(s): Correction #1 - Operator mixed up a fresh solution of chlorine bleach sanitizer for the first spray bottle and diluted the concentration to 100ppmin the second spray bottle. *Purchase test strips for chlorine
