Routine Inspection

- All fridges measured at or below 4C. All display coolers measured at or below 4C. All freezers measured at or below -18C. Walk-in cooler observed to be clean and organized. Food stored above the floor in walk-in cooler and delivery cooler. Thermometers noted in all cooling units. Temperature Monitoring logs are to be kept updated daily.
- Hot holding unit for roasted chicken measured at 60C or hotter. Temperature log noted.
- General sanitation is satisfactory. Floors are clean and free of build-ups and dust. Sanitizer QUAT available in dispensers and measured being at 200-400 ppm at the time of inspection. Meat department 3 comp sink maintained. washing and sanitizing procedure discussed with the operator.
- 3-comp sink at Produce section maintained. Vegetable washing procedure discussed with the operator. Cutting board is to be sanitized with QUAT between tasks. Expanding on existing canopy over the produce cut section was discussed with the store manager. New canopy is to cover the sinks, cutting board and SS counter top so that cut vegetables and other food are protected from potential contamination from above.
- Hand washing stations are fully supplied and liquid soap and paper towel in dispenser provided. It is also suggested that a secondary paper towel dispenser be installed close to hand washing station in produce section.
- No obvious sign of pest activity noted at this date.Receiving area observed to be maintained and clean. Dry storage maintained. Customer and staff washrooms maintained.
