Observation (CORRECTED DURING INSPECTION): No sanitizer was available at the time of inspection.
Corrective Action(s): Sanitizer was prepared at the three compartment sink and in a bucket at 100 to 200 ppm chlorine. Ensure that at all times during operation, sanitizer is available at the proper concentration for effective sanitizing of food contact surfaces. Store wiping cloths in sanitizer solution when not in use.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Back hand washing station lacked paper towels.
Corrective Action(s): Paper towels were placed atop the dispenser at the hand washing station. Ensure that at all times, all hand washing sinks are supplied with hot and cold running water, liquid hand soap, and single use paper towels to facilitate proper hand washing.

209 - Food not protected from contamination [s. 12(a)]
Observation: The following was observed:
1. Personal items such as a coat and a shirt were stored above an open bag of sugar *CORRECTED*
2. Raw shell eggs were stored above icing squeeze tubes in the 3-door cooler *CORRECTED*
3. Containers of melted chocolate were stored without lids. One container was stored directly below small metal wares hanging off the wire rack above. *CORRECTED*
4. Waffle cones were stored directly in front of an air conditioning unit. Unit was not on at the time of inspection; however, unit was covered in dust and some hair. Cones did not appear to be contaminated. *CORRECTED*
5. Light fixture located above mixer lacks a shatterproof cover.
Corrective Action(s): Ensure that all personal items are stored in a designated area away from food or food contact surfaces. Ensure that all food items are properly covered to protect from potential contamination. Ensure that air conditioning unit is properly cleaned. Do not store food items directly in front of air conditioning unit to protect from potential contamination. Install a shatterproof covering for the above-noted light fixture to protect food/food contact surfaces in the event of bulb breakage. Date to be corrected by: July 20, 2018.

Observation: A build up of debris was observed in the following areas:
- Under all freezer and cooler units in the back
- Under table to the left of two-door freezer
- Under all wire shelving in the back
- Under prep table and on lower prep table shelf
- On wall behind waffle cone dip station
- On and around waffle irons
- In door seals of under counter cooler
Corrective Action(s): Ensure that the above-noted areas are properly cleaned and sanitized. Food debris may potentially attract pest activity and may potentially contaminate food or food contact surfaces. Date to be corrected by: July 20, 2018.

Observation: The paper towel dispensers for both hand washing stations were not functional.
Corrective Action(s): Ensure that functional paper towel dispensers are in place at the hand washing stations. Paper towel roll may go missing or may potentially become contaminated when not properly stored in a dispenser. Date to be corrected by: July 6, 2018.

502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
Observation: Only staff member on duty does not hold FOODSAFE Level 1 or its equivalent.
Corrective Action(s): Ensure that in the operator's absence, at least one staff member on site has FOODSAFE Level 1 or its equivalent. Ensure that enough staff receive FOODSAFE Level 1 training to meet this requirement. Once staff have successfully completed the course, ensure that copies of staff FOODSAFE certificates are kept on site. Date to be corrected by: July 29, 2018.

- 2-door silver freezer at -27 degrees C
- 3-door cooler at 1 degree C
- Hand washing stations unobstructed and supplied with hot and cold running water, liquid hand soap, and single use paper towels (exception: refer to violation code 401)
- Dipper well functional
- Bleach water sanitizer prepared at 100 to 200 ppm chlorine at three-compartment sink during the inspection.
- Non-latex gloves available
- No signs of pest activity observed at time of inspection
- Permit to Operate is posted at front
