Observation (CORRECTED DURING INSPECTION): Bleach sanitizer was unavailable for use in the kitchen. Bleach was placed on the floor by the front entrance.
Corrective Action(s): Ensure bleach sanitizer is easily accessible to allow staff to sanitize food contact surfaces. Bleach was placed by the food preparation area at the time of inspection.

Observation (CORRECTED DURING INSPECTION): 1) Scoops were stored inside ingredient containers and a bag of corn starch was stored in a corn starch container.
2) Raw meats/eggs were stored above ready-to-eat foods.
Corrective Action(s): 1) Ensure foods are equipment are stored in a sanitary manner to prevent potential contamination of foods. Scoops and bag of corn starch were removed from the food containers at the time of inspection.
2) Ensure eggs are stored below ready-to-eat foods to prevent potential contamination of foods. Raw foods were relocated to the bottom level at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Frozen fish was thawing at room temperature.
Corrective Action(s): Ensure frozen foods are thawed under cold running water or in a refrigerator at 4C or less to prevent potential grow of pathogens and/or the formation of toxins. Fish was moved to the walk-in cooler at the time of inspection.

Observation: Rat droppings were observed by the back door.
Corrective Action(s): Contact professional pest control operator to service facility and determine potential entry points. Have pest control operator mitigate the infestation.

Observation: Rat droppings were found by the back entrance and food and other debris was observed behind the 2-compartment sink.
Corrective Action(s): Clean and sanitize all areas affect with rodents droppings ensure area behind the 2-compartment sink is clean and maintained in a sanitary condition.

-Walk-in cooler was at 4C.
-Walk-in freezer was at -17C.
-Prep cooler was at 4C (top and bottom).
-Under counter cooler was at 3C.
-Bar cooler was at 4C.
-Front service area cooler was at 1C.
-Front chest freezer was at -18C.
-Cooked potentially hazardous foods cold rapidly in the walk-in freezer for approximately 3 hours, prior to transferring to the walk-in cooler. Foods were at 4C.
-High temperature dishwasher had a final rinse temperature of 72C on the dish surface on consecutive cycles (minimum of 71C required for proper sanitizing).
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer spray bottle was labelled and tested at 200ppm.
-Washroom clean and sanitary. Handwash station supplied with hot and cold running water, liquid hand soap, and single use paper towels.
*Additional cleaning required along the door seals for the prep cooler.
-FOODSAFE Level 1 valid until June 30, 2027.
