A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers -23C or colder; hot holding above 60C; and thermometers present.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Foods stored in food grade container; covered; stored in groups with raw proteins separate from RTE foods; and 6" off the floor on shelves or platforms.
- No expired foods for sale or in use.
- General sanitation level is good. Exhaust canopy was professionally cleaned in July 2018 and next cleaning due in January 2019. Exhaust filters cleaned weekly by staff.
- Meat slicer is clean.
- FoodSafe certified staff present, certificate has expiration date of Nov. 22, 2020.
- No signs of pests.
- Staff wear disposable gloves to handle raw proteins, and then discard gloves after.
- Cloth towels, used for wiping, are being stored in a bleach-water solution with [Cl2] of 100ppm.
- All damaged walls and corners have been repaired. All surfaces are smooth, sealed, durable, and cleanable.
- Bean sprouts being stored in ice-water bath solution, temperature was 4C.
A follow-up inspection will be conducted on Aug. 7/18 to ensure the dishwasher is working correctly. |
