Routine inspection conducted at the kitchen of holding center and the following observations were made during the inspection:

Temperature:
- Walk-in freezer at -20C.
- Walk-in cooler at 4C.
- Walk-in cooler (dairy) at 2C.
- Small fridge near coffee station at 2C.
- Blast chiller used for rapid cooling for cooked food.
- Temperature logs were maintained and found up-to-date.

Hygiene and Sanitizing:
- Hand wash station was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels. As per the discussion during initial inspection, the facility has extended the splash guards.
- Sanitizer pail available and the concentration of QUATS noted at 200ppm. Staff prepares sanitizer solution every morning.
- Sanitizer dispenser (bottle) releases 200 ppm QUATS at 2-compartment sink.
- Hot temp mechanical dishwasher was able to reach a temperature of 75C at dish surface.
- Sanitizer logs were maintained and found up-to-date.
- No build-up of grease/dirt noted on the vents. As per the staff, vents are cleaned every month.
Cutting boards are wearing out. Consider replacing them with new ones.

Storage:
- All food items were stored at least 6" off the floor.
- All products were found either in original packaging or covered inside coolers with time stamps.
- Storage area was well-organized.
- Chemicals and cleaners were stored separate from food preparation areas.

Pest Management:
- Professional pest control company conducts routine checks.
- No visible signs of pest activity observed at the time of inspection.
- Mechanical traps were present throughout the facility.

Administrative:
- Operating permit was posted in a conspicuous location.
- Operator has valid FoodSafe Level 1 certificate.

Note: Due to COVID-19 pandemic, the facility was not running at full capacity.
