Coolers are all at 4 C or colder - good.
Hot holding today (steam table and rice) - food is at 60 C or hotter - good.
Cooling of hot foods - an ice wand is available to help with quick cooling of hot sauces.
Food safety plan and temperature chart are posted in kitchen. Keep temperature records.
Salmon receipts available.
Hand washing - bar, kitchen and server hand sinks have liquid soap and paper towels.
Main kitchen is being routinely cleaned - good. Floor is clean under prep tables, in dry food storage etc.
See above regarding pop storage room floor. Monitor for pests in this room.
Pest control program is in place - receipt available. Keep back hallway door fully closed.
Wiping cloths - do not add detergent to the chlorine/water in the bucket. Wash cloths with soap and then use water and bleach to sanitize - set up during inspection (200ppm chlorine detected).
Commercial dishwasher - 50ppm chlorine detected on dishes after final sanitizing rinse - good.
**Reminder to keep copy of Food Safe level 1 certificate on site. Chef advises they took course in 2017.
Certificates obtained before 2013 have expired and an online Refresher course is required to renew (www.foodsafe.ca).
