Observation (CORRECTED DURING INSPECTION): No sanitizer available in back food preparation.
Corrective Action(s): Ensure sanitizer is made fresh at the start of each day and ensure it is always readily available for use. Make sanitizer immediately upon changing throughout the day.

Observation (CORRECTED DURING INSPECTION): A) Tray of cooked potatoes and container of broth noted cooling on chest freezer in back hallway.
B) Lights above dishwasher still did not have cover/sleeves.
Corrective Action(s): A) Do not store open foods in the back hallway. This outside area is not part of the approved premises.
B) Obtain and install cover/sleeves for the lights above the dishwasher

Observation: Wall beside microwave still dented and worn away.
Corrective Action(s): Repair/finish wall so that it is smooth, durable and washable.

Comments

- Door to back hallway was closed at time of inspection
- Door to washroom was closed at time of inspection. Operator has purchased a self closing hinge but still has to install it. Have self closing hinges installed by the next routine inspection
- No food noted on the ground at time of inspection (ie. walk in cooler)
- Operator to discuss sanitizer and food protection requirements with kitchen staff as this is a reoccurring infraction
- Operator to ensure the above noted structural deficiencies are corrected by the next routine inspection as they have been noted on previous reports
- Reoccuring or repeated infractions will result in the issuance of correction orders, violation tickets..etc.
