Observation (CORRECTED DURING INSPECTION): One quat sanitizer bucket contained zero quat sanitizer (and potentially contained an unknown chemical). One tap on the quat sanitizer dispenser above the 3-compartment sink is currently labeled 'sanitizer,' but does not dispense quats sanitizer.
Corrective Action(s): Sign placed above dispenser. Ensure all staff use only the correct tap on the dispenser for this purpose. Test strips are available - check quat concentration daily.

Observation: Dishwasher was leaking heavily at time of inspection. Technician had been called and was in the process of fixing the machine.
Corrective Action(s): Discussed procedures with manager on site during inspection - if washer cannot be fixed by tonight, switch to disposable cups, dishes and utensils only. Do not use the machine if it is not functioning properly (ensure all knives and other food preparation utensils used in the kitchen are properly washed, rinsed and sanitized in the 3-compartment sink). Call for reinspection once fixed.

*Food Safe training requirements still outstanding. Manager states staff have been registered - ensure certificates are provided by date indicated in past reports.
*Follow-up inspection required for dishwasher - call for reinspection once fixed.
