Comments

General maintenance and sanitation excellent at the time of inspection. Hand washing stations supplied with liquid soap, single use paper towels and hot/cold running water. Cooler #1 (back) at 3.5 C. Cooler #2 (back) at 2.9 C. Small prep.cooler at 4C (top)/at 2C (under inserts). All freezers (domestic/chest) maintained below -18 C. Hot holding at 82 C. Domestic ventilation hoods and stove (2) - clean. Storage - well organized. All equipment stored in sanitary manner. Surface sanitizer (chlorine solution) at 100 ppm. Bleach available on-site. Low temperature dishwasher - satisfactory (a sanitizer changed at the time of inspection). No signs of pest activity at the time of inspection.
