Observation (CORRECTED DURING INSPECTION): Bar cloths for espresso soaking in quats sanitizer at 50 ppm. Sanitizer appeared soiled.
Corrective Action(s): Quats sanitizer must be maintained at 200 ppm to properly sanitize cloths. Change solution often to maintain.

High-temperature dishwasher reached >71C at the plate level upon final rinse cycle
3-compartment sinks available. Proper washing and sanitizing observed.
Ice machine in sanitary condition, free of rust and mould. No scoop stored inside.
All coolers operating at </= 4C
All freezers operating at </= -18C
Thermometers inside refrigeration equipment
Customer milk canisters milk levels checked every 10 minutes and are temperature checked every 45 minutes and discarded if temperature out of range.
No hot-holding observed
No signs of pests observed
General sanitation is satisfactory
