Observation (CORRECTED DURING INSPECTION): One package of pita bread in the walk-in cooler had chew marks on it from rodents.
Corrective Action(s): Discarded during inspection. All other food was checked and was ok.
Check all food daily for chew marks.

Observation (CORRECTED DURING INSPECTION): Bleach bucket was at 0 ppm during the start of the inspection.
Corrective Action(s): Corrected. This is a repeat violation. A sanitizer solution must be available at all times when the restaurant is in operation.

Observation: Mouse droppings found in the following areas:
-In the walk-in cooler on the shelving (all levels) and along the walls.
-In the storage room.
Corrective Action(s): Droppings cleaned. A pest control company comes here monthly, invoices on site and reviewed. Call the pest control company to come back within the next 2 days.

Observation: a) The area underneath equipment in the kitchen has a build up of grease and food debris.
b) Droppings found in the walk-in cooler and storage room. See violation code 304 for details.
Corrective Action(s): a) Clean today.
b) Droppings were cleaned during the inspection.

Comments

-Handout on "Getting Rid of Rats and Mice" provided and discussed during the inspection.
-Recommend removing rubbermaid container full of water outside, as well as miscellaneous items next to the building.
-Trees, shrubs and grass next to the building should be kept to a minimum.
-Discussed sealing entry points around the walk-in cooler. This will be done today.

Hand sinks supplied with hot and cold water, soap and paper towels.
Dishwasher final rinse cycle reached 75 C at the plate level.
Glasswasher final rinse cycle had 100 ppm chlorine.
All coolers were < 4 C.
All freezers were < -18 C.
