Observation: 3 compartment dishwashing sink is used for manual dishwashing. No drain plugs on site to carry out manual dishwashing. Upon discussion, staff and the new operator stated that only dish soap and water is used for washing dishes/utensils. Bleach bottle was available on site and steps for manual diswashing discussed - wash, rinse, sanitize and air dry.
Corrective Action(s): Follow proper steps to conduct manual dishwashing to adequately clean and sanitize food contact surfaces. Have drain plugs on site. Both operator and staff should know how to make sanitizing solution in 3rd sink.

Observation (CORRECTED DURING INSPECTION): 2 handwash sink on site. One was blocked with pizza pans at the time of inspection and had no supply of soap and paper towels. Second sink had plumbing/leakage issues and was not being used. Operator stated that dishwashing sink is used for handwashing. No paper towels at 3 compartment sink. Staff restocked one of the handwash sink at the time of inspection with liquid soap and single use paper towels.
Corrective Action(s): - Repair the broken handwash sink immediately.
- Ensure that all handwash sink have adequate supply of hot and cold running water, liquid soap and single use paper towels.
- Do not block any sink. Keep them accessible for handwashing at all times during facility operation.

Observation: 1. Gap observed under the back door that could be a potential entry point for pests/rodents.
2. Open bags of flour/rice noted on the shelving area that could attract pest.

Comments

Routine inspection conducted.

Operator stated that food services are limited to selling pizza. No catering services are provided as the chef is away (temporarily).

Temperature (coolers to be maintained at 4C or less, freezers at -18C or less, hot holding at 60C or above):
- Walk in cooler recorded at 0C
- Pizza prep cooler and small cooler below 4C
- Back 2 door cooler at 2C
- 2 door freezer at -18C
- Front beverage cooler at 4C
- No hot holding unit or front display cooler in use.

Storage:
- All food items were stored at least 6" off the floor.
- Back storage area was organized.
- Chemicals and cleaners were stored separate from food preparation areas.

Sanitation & Maintenance:
- Sanitizer spray bottle available and the concentration of QUATS noted at 200ppm.
- No visible signs of pest activity observed at the time of inspection.

NOTE - New operator has taken over this facility on March 7, 2023. Legal owner of the facility is the same corporation. Please submit the following documents by July 17, 2023:
1. Incorporation documents
2. Operator's FOODSAFE Level 1 certificate or equivalent.

Please register for FOODSAFE Level 1 course by end of day today and have a copy of registration ready for verification by district EHO.

A follow up inspection will be conducted.
