Observation (CORRECTED DURING INSPECTION): Service counter at front for cutting sweets has sticky leftover residue. Prep table has spilled sauces and food residue.
Various other prep surfaces have sticky, food residue.
Operator cleaned some surfaces during the inspection.

Observation: Equipment, utensiles and other dishes are not being sanitized in 3-comp sink.
Sinks have food residue and appear dirty. Large bottle of sanitize is empty (quat).
Staff unsure of what procedure to follow for 3-comp sink method.
Education provided on 3-comp sink method.
Corrective Action(s): Clean and sanitize sinks and drying area before using for dishes.

Observation: Prep tables X3 are aligned in middle against storage room and block hand sink. Hand sink used as dumping sink for boiled beans. Staff said this is in use.

Observation: Spilled flour, spices and other food items under racks, prep tables. Single use disposable take out containers are scattered on tables and underneath equipment. Kitchen appears cluttered and disorganized.
Corrective Action(s): Complete inventory of kitchen.
Organize equipment and take out containers to avoid spillage and contamination.
Sweet and clear under racks, equipment and shelving.
Update your sanitation plan.

Fridges <4C.
Freezers <-18C.
Take out only, single use dishes.
Dry storage - majority of items stored covered and in bins.
Staff describes thawing under cold running water (fish) in sink, in packages.
Cooking observed in small containers (plastic bins).
No signs of pest at the time of inspection.
