Observation: Raw chicken was stored directly on top of staff ready-to-eat foods.
Corrective Action(s): Raw meats must always be stored below ready-to-eat foods (whether for staff or customers) to prevent potential contamination of foods. Raw meat was relocated at the time of inspection.

Comments

-Follow-up inspection to Oct 24, 2018.
-Prep cooler unit was at 3C. Operator was unable to explain what was done to the cooler unit.
-Upright cooler door seal still requires repairs. Operator states door seal has been ordered.
-Did not observed foods being improperly cooled at the time of inspection.
-Plastic sushi mat covers are changed throughout the day.
-Equipment was found to be clean and sanitary at the time of inspection.
-Bleach sanitizer levels were measured at 200ppm. Sanitizer pails were properly labelled.
