Observation (CORRECTED DURING INSPECTION):
Two dented cans of tomato paste found in dry storage area. Operator informed that dented cans are still used in the facility.
Corrective Action(s):
Discard dented cans of tomato paste. Ensure to check all canned items frequently for any dents or bulging. If the seals are broken/damaged and the can is dented, then oxygen may enter the anaerobic state and cause spoilage of the food, and potentially oxidize the metal.

Routine Inspection:
- Hand washing stations fully equipped with liquid soap, paper towels and hot/cold running water.
- All temperatures met health requirements:
Coolers maintained at or below 4 degrees Celsius (40 degrees Fahrenheit).
Freezers maintained below -18 degrees Celsius (0 degrees Fahrenheit).
Hot holding maintained above 60 degrees Celsius (140 degrees Fahrenheit).
- Thermometers available in all cold holding units.
- Temperature records maintained
- Concentration for QUATs sanitizer = 200 ppm. Wiping cloths stored in sanitizer solution - very good.
- High temperature dishwasher sanitizing with 78.9 degrees Celsius at dish level after final rinse cycle.
- 3-compartment sink available for manual warewashing. Sink plugs available.
- General food storage practices good:
Foods stored at least 15 cm off the floor.
Foods are organized on all shelving units.
- Ice machine maintained in a sanitary condition. Ice scoop stored separately.
- Exhaust hoods maintained in a sanitary condition at the time of inspection.
- Overall cleanliness and maintenance very good.
- Pest control in place.
- No signs of pest activity at the time of inspection.
- Chemical storage satisfactory.
