Observation (CORRECTED DURING INSPECTION): Three trays of cooked potato was cooling at room temperature. Internal food product temperature measured at 25C. Operator stated they were left at room temperature for an hour and half.
Corrective Action(s): Move all three trays of food into the walk-in cooler immediately. Potentially hazardous food must be cooled from 60C to 20C in 2 hours and 20C to 4C in 4 hours. Educate the staff on proper cooling procedure.

Observation (CORRECTED DURING INSPECTION): Hand washing station at the prep line was obstructed by a sanitizing bucket. Hand washing station must be free of obstruct at all times.
Corrective Action(s): Remove the sanitizing bucket from the hand washing station. Do not store any containers or utensils at the hand washing station.

Routine inspection:
- Coolers (walk-in, sandwich, draw, stand-up) maintained at 4C or lower.
- Freezers (walk-in, under the counter, stand-up) were functional.
- Hot potentially hazardous food hot held above 60C.
- Hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- 200 ppm bleach sanitizer available in buckets. Ensure wiping clothes are stored inside when not in use.
- High temperature dishwasher registered 72C at the plate level.
- Glass washer dispensed 25 ppm iodine.
- Ice machine and deli slicer maintained in a sanitary condition.
- Caulking at the 2 compartment sink at the salad prep area had been replaced.
- Food products stored off the ground and organized.
- Temperature records maintained and available for review.
- General sanitation satisfactory.
- No pest activities observed at the time of inspection.
