Observation (CORRECTED DURING INSPECTION): * Single use containers were being stored on shelf in raw chicken prep area. This is unsanitary and can lead to cross contamination. Operator removed conatiners and stored them in proper location with other single use containers
Corrective Action(s): * Ensure all single use containers stored properly and in sanitary manner to reduce risk of cross conatmination. Single use containers/cutlery can be stored in original bag or on a washable tray to maintain sanitary condition

Observation: * Undercounter freezer (2-door) still has ice built up along center gasket area. This is not proper function for freezer unit. Ice should not be building along gaskets as this can also contaminate food stuff stored in freezer
Corrective Action(s): * Repair freezer unit so that ice not building along gasket and maintain in proper working order. Clean gaskets too as build up of debris/grime can occur

Observation (CORRECTED DURING INSPECTION): * Staff/food handler wearing hat and hat not washed daily-- operator reminded that staff must have proper hair control (eg. hair net, etc) if handling food and not a hat that is not washed
Corrective Action(s): * Ensure staff handling food wear proper hair control to reduce risk of hair falling in food during handling

* Organizational improvements noted; NOTE: staff belonging to be stored in lockers and on staff hooks and NOT on food/food equipment
* Monitoring records for hot-holding/reheating of rice were being kept; update monitoring sheets (and include more frequent sanitizer checks-- sanitizer (quaternary ammonium to be changed every 2 hours)
* Note: food equipment (including prep cooler doors, and gaskets/seals, etc) to be cleaned regularly to remove all build up of grime/debris
