Observation (CORRECTED DURING INSPECTION): A bus pan of fish was being thawed at room temperature. Room temperature thawing/storage of potentially hazardous food is an unacceptable practice.
Corrective Action(s): As temperature of the fish was still <4C, Operator was directed to continue thawing process in the cooler or under cold running water. Ensure food safe thawing practices are followed.

304 - Premises not free of pests [s. 26(a)]
Observation: A few rodent droppings were noted on the floor of the dry storage room.
Corrective Action(s): Clean up droppings and sanitize floor area. Put dry goods (bags of rice) in pest proof containers. Monitor for further activity. If noted, contact Pest Control technician to provide service.

Comments

-General sanitation was satisfactory. Some attention needed to area where warewashing sink attaches to the wall as some mold/mildew noted. Clean and sanitize area. Improvement to this surface may be needed to prevent future moisture related issues.
-Handsinks supplied with liquid soap and paper towel
-Quats sanitizer (200ppm) present in spray bottles for sanitizing food contact surfaces
-High temperature dishwasher met sanitizing requirement. Temperature at dish surface was 73.9C measured with min/max thermometer.
-Walk-in cooler was at 3C
-Glass door cooler was at 4C
-Chest freezers were -15C and -17C
-Upright freezer -15C
-Rice was being hot held at 71C
