Observation (CORRECTED DURING INSPECTION): Sanitizer bottle had >400ppm chlorine measured. 200ppm chlorine solution was prepared in a bucket at the time of the inspection.
Corrective Action(s): Ensure to have 200ppm chlorine solution prepared in a labelled spray bottle or bucket (prepared daily) at all times. Use the solution to have all food contact surfaces sanitized not only at the end of each night, but every morning before initiating any food prep for the day, after each possible contamination and every 2 hours during operation.

Routine inspection conducted:

- Handwash station adequately supplied with liquid soap, paper towels and hot/cold running water.
- Coolers operating at/below 4'C; freezer operating at/below -18'C.
NOTE: Hot-holding unit has not been in use. Ensure the unit is operating at or above 60'C when in use.
- Temperature monitoring system in place.
- Dishwashing sink equipped properly for manual warewashing.
- Washroom satisfactory. Back storage area satisfactory.
- No evidence of pest activity observed.

General sanitation satisfactory but could be improved by cleaning hard to reach areas on a more regular basis.
