Observation (CORRECTED DURING INSPECTION):
Tin foils were being used to cover up deep fryer area and were visibly soiled and greasy. operator stated he changes the tin foils once every 2 weeks.
Corrective action: Remove the soiled tin foils and replace the tin foils on a daily basis.

Observation (CORRECTED DURING INSPECTION):
1) Oyster sauce is being stored in its original opened can.
2) Foods double stacked in containers were not being separated by lids.
Corrective action:
1) Transfer the oyster sauce to a food grade container to prevent leaching from the can.
2) Cover food stored in containers to prevent potential food contamination.

Observation:
Exthaust Canopy above deep fryers was visibly soiled with heavy grease build up. Next service date for cleaning the exthaust canopy was overdue for a year.
Corrective action: Ensure the exthaust canopy is being cleaned up in a regular basis to prevent potential food contamination and fire hazards.

- Chest freezer in the storage room was broken and only used to store non-potentially harzardous food.
- Rice: 67 deg.C (left), 66 deg.C (right)
- High temp dishwasher: 74 deg.C on the plate level.
- Sanitizer concentration: 200ppm chlorine.
- All handsinks are fully equipped with hot and cold running water, liquid hand soap, and paper towel.
- No signs of pest activity observed during inspection.
- FoodSafe level 1 certificate was not being stored on site during inspection, ensure food safe level 1 certificate are on site for future inspections.
- Cheque for permit fee for fiscal year of April 2021 to March 2022 recieved ($250 dollars: cheque number 006368)
- Crab tank is no longer be in use.
