Observation (CORRECTED DURING INSPECTION): Went through manual dishwashing procedures with staff. Staff explained procedures without the sanitizing step. Went through same discussion with manager and manager indicated sanitizer is used after washing and rinsing.
Corrective Action(s): Ensure all staff follow proper dishwashing procedures: washing, rinsing, soak in sanitizer for 2 minutes, and air dry.

Note:
1. Facility is proposing to add a soft serve ice-cream machine. Machine and cones will be placed right above Fridge #3. Fridge #3 will be used to store extra products (it's pretty empty right now). Handwashing station is close by for staff to wash their hands prior to handling food. Facility is given approval to add ice-cream machine.
2. Specialty coffee and bubble tea are offered in this location, extra from the other two locations. However, facility only has a 2-compartment domestic sinks for dishwashing. For this location, a 3-compartment commercial sinks is recommended, due to the amount and size of dishware the facility needs to wash.
3. Since the sinks at the front by coffee and bubble tea are handwashing sinks, staff are not allowed to rinse and/or use sinks for other purposes. A prep. sink is recommended at the front area.
