Observation (CORRECTED DURING INSPECTION): Raw fish in the walk-in coolere was observed to be stored above cooked fish. Operator was notified and they immediately corrected the storage.
Corrective Action(s): Ensure raw potentially hazardous foods are stored in a manner that does not pose risk for contamination to ready to eat foods.

Observation: The following areas require cleaning and sanitation:
1) Dry storage area has spilled flour build-up alongside the floor
2) Storage lid observed with food debris build-up
3) Area underneath the stove/fryers has a build-up of grease and food
4) Food processing equipment (dough roller and vegetable cutter) observed to have built up food debris
Corrective Action(s): Clean and sanitize all mentioned areas thoroughly. These areas should be cleaned more frequently to avoid build-up.

Routine inspection conducted alongside the operator.

-Handwash stations are fully stocked with liquid soap, paper towels, and hot/cold water
-All coolers (Walk-in, prep, and display) are at or below 4C
-All freezer units are at -18C
-High temperature dishwasher achieves 71C.
*Ensure drain plugs are available for the 3 compartment sink
-Food Contact Surface sanitizer achieves 200ppm chlorine. Ensure there is sanitizer available for both the kitchen and front area
-No signs of pest activity
-Dry storage is okay
-Fume hoods are clean
