Corrective Action(s): As discussed, store the eggs in the cooler OR place a time stamp on them. They shouldn't be stored at room temperature for longer than 2 hours. Violation Score: 5

304 - Premises not free of pests [s. 26(a)] Observation: A dead mouse was caught on a snap trap outside the walk-in freezer upstairs. Corrective Action(s): Remove the dead mouse as discussed. Ensure staff are checking traps regularly and cleaning droppings. Violation Score: 3 305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)] Observation: The back door was propped open. Corrective Action(s): The stocker was called in to help out in the front service area so he left the door propped open. When staff are not stocking, the back door must be kept closed. Violation Score: 3

-All coolers are below 4 degC -Freezers are below -18 degC or the foods in them are frozen -All hotholding is above 60 degC -Time stamps are posted on all the condiments -Handsinks are fully equipped. Hand sink was not blocked. -Sanitizer solution had 100ppm chlorine in it. -Orkin Pest control company is on contract.
