Observation (CORRECTED DURING INSPECTION): A wiping cloth with raw meat debris on it was observed lying on the cutting surface table.
Corrective Action(s): Ensure all wiping cloths are kept immersed in 200 ppm QUATS sanitizer between use to properly sanitize surfaces (i.e. destroy harmful bacteria on surfaces). Ensure staff replace the sanitizer and wiping cloths frequently throughout the day (e.g. every 2-3 hours) depending on usage.

Observation (CORRECTED DURING INSPECTION): Two bags of dry goods in the aisles had either torn packaging or a non-intact seal.
Corrective Action(s): Both bags were removed and discarded by a staff member upon direction by the Store Manager.

Comments

Meat department:
-Meat sales/service was occurring at the time of inspection.
-A second handsink was installed near the front service area.
-A wall was removed and an access way was created between the front and back areas of the meat department.
-A transparent window was installed to enable view of the back area.
-A meat display cooler was upgraded with a new display cooler which was at or below 4 degrees C.
-Walk-in-cooler and other display coolers were at or below 4 degrees C.
-Walk-in-freezer temperature was satisfactory.
-Meat equipment is washed and sanitized every 2-4 hours according to staff.
-No signs of recent pest activity were observed at the time of inspection.
-Warewashing sinks were operational.
-200 ppm QUATS sanitizer was available.

Produce department:
-Walk-in-cooler was at or below 4 degrees C.
-Two buckets of 200 ppm QUATS sanitizer were setup during slicing of produce.
-Handsink was adequately supplied.
-Prep. sinks were operational.

General Store:
-Coolers were at or below 4 degrees C.
-Freezers were at or below -18 degrees C.
-Refrigeration units were equipped with thermometers.
