Observation (CORRECTED DURING INSPECTION): Raw beef observed to be stored on top of cooked rice noodles and cooked meat in the stand-up cooler. Raw beef observed to be stored beside cooked shrimp, chopped carrots, and diced green onions in the walk-in cooler.
Corrective Action(s): Store all raw meat below all ready-to-eat foods (i.e.: cooked shrimp, cooked meat) and/or raw vegetables in all cooling units to prevent possible cross-contamination.

Observation: Walk-in freezer measured at an air ambient temperature of -12C. Prep cooler cover is loose.
Corrective Action(s): Service the aforementioned items:

-Prep cooler cover secure tightly to prevent loose nuts and bolts to contaminate food.

Communicable Disease compliance conducted. COVID-19 Safety Plan available and on-site. Mask policy in place. Physical distancing signage in place. Sanitizer available for customer use. Signage posted at front door to advise people who display COVID-19 symptoms to not enter. Daily health check for staff conducted. Tables and chairs cleaned and disinfected after each-use. Customer contact information collected daily for contact tracing purposes.

Handwashing sink well equipped with hot and cold running water, liquid soap, and paper towels.
Chlorine sanitizer bucket at the front measured at 200ppm. Low-temperature dishwasher measured at 100ppm chlorine.
Prep cooler, walk-in cooler, and stand-up cooler measured at 4C. Rice cookers measured between 65C-89C.
Ice machine in sanitary condition.
No signs of pests observed.
Overall, facility is well organized.
