205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): 4 trays of cooked mushroom stems were at room temperature. Food items were probed at 24C (air temperature was also at 24C). Staff stated the food items have been outside for 2 to 3 minutes.
Corrective Action(s): Potentially hazardous foods must be stored below 4C or above 60C to prevent the growth of pathogens and or the formation of toxins. Items were discarded at the time of inspection.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Manual slicers were found to have food debris on the blades.
Corrective Action(s): Ensure all equipment is properly cleaned and sanitized after each use to prevent potential cross contamination of foods. Slicer was cleaned and sanitized at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Facility has a house fly issue and the front doors are open. Operator stated the kitchen is too warm and the door is for ventillation.
Corrective Action(s): Front door needs to be closed to keep flies out. If ventillation is needed, either install a ventillation system, air condition, or an alternate method to exhaust hot air without allowing pest entry. Door was closed at the time of inspection.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Plastic glove was placed between the 3-compartment sink plug and drain to prevent water from leaking.
Corrective Action(s): Obtain sink plugs which fit properly into the sink to prevent water from leaking.

Observation: Bleach sanitizer pail under the 3-compartment sink was unlabelled at the time of inspection.
Corrective Action(s): Ensure all chemicals and containers are properly labelled to prevent accidental mixing or misuse of chemicals. Containers must be relabelled as needed.

Observation (CORRECTED DURING INSPECTION): Plastic zipper seal bag was being dried in the 3-compartment sink area. All brand markings on the bag have been washed off.
Corrective Action(s): Single use items are intend for one time use and cannot be washed and reused. Bag was discarded at the time of inspection.

Observation: Double glass door cooler unit thermometer was not functioning properly.
Corrective Action(s): Ensure all cooler units are equipped with accurate thermometers to verify coolers are functioning properly.

Comments

-Prep cooler was at 4C (top and bottom).
-Both double door coolers were at 4C.
-Kimchi cooler was at 0C.
-Freezers units range from -10C to -19C.
-Hot holding of rice and sauces was greater than 60C.
-3-compartment sink bleach prepared at the time of inspection and was at 100ppm.
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer was tested at 100ppm.
-General sanitation satisfactory at the time of inspection.
-Washroom clean and sanitary.
-FoodSafe Level 1 valid until Sept 8, 2023. Staff do not appear to operate facility in accordance with the principles of FoodSafe.
