* Quat sanitizer ( Haddock) at the dispenser and in spray bottles tested 400 ppm ( Too High.) You must contact the chemical company to
re-calibrate the dispenser so that it dispenses the sanitizer at 200 ppm. In the interim, add more water to all sanitize spray bottles.
* The thermometer on the single door upright cooler needs to be replaced.
* The cutting board on line needs to be replaced ( ASAP).

Walk-in cooler < 4 degrees C.
Walk-in freezer< -18 C.
Preparation coolers < 4 C.
Hot holding of soups> 60 C.
Dishwasher final rinse: 100 ppm chlorine at the plate surface.
Hand wash stations supplied with liquid soap and paper towels.
General sanitation is very good.
Temperature and sanitizer logs are up to date.
Food handling practices satisfactory.
