1st Floor Kitchens (2):
- Hand-washing basins are stocked with hot/cold water, soap, and single-use towels
- Refrigeration temperatures are ≤4o Celsius
- Freezer temperatures are satisfactory
- Suma D10 sanitizer available at 200ppm (quats) concentration under 2-compartment sinks
*Ensure sanitizer bottles refilled regularly to ensure fresh solution is used (sanitizer concentration depletes over time)
- High-temp dishwasher achieved final rinse temperature of ≥71o Celsius
- 2nd dishwasher wasn't fully warmed-up at time of inspection. Thermolabels were provided for staff to self-check final rinse temp of 2nd dishwasher (71 C indicator box should turn "black" in colour after cycle)
- No sanitation concerns noted at time of inspection
- No pest activity observed during inspection

2nd Floor Kitchens (2):

- Refrigeration temperatures are ≤4o Celsius
- Freezer temperatures are satisfactory
- Quaternary-ammonium food-contact surface sanitizer solution in spray bottles (Suma D10) under the 2-compartment sinks doesn't have sufficient concentration for sanitizing food contact surfaces (0ppm)
*Staff indicate that the dishwasher is primarily used to wash and sanitize equipment, utensils, etc.
*Please re-fill/replace sanitizer bottles with fresh solutions in both 2nd floor kitchens.
*Ensure to re-fill/replace sanitizer solutions regularly, as the concentration in the solution depletes over time
