Follow up to Rpt # MBEK-AZ3UJN Operator has obtained an ice wand to facilitate cooling of soups/sauces/broths. Please note that additional ice wands may be needed depending on the frequency of food preparation as well as the type and volume of food product requiring cooling. Raw and ready-to-eat foods observed to be properly organized. Food is protected from contamination. Frozen food observed to be thawing in the walk in cooler. Ventilation hood canopy observed to be in sanitary condition. Reminder to ensure that ventilation hood canopy is being cleaned between professional cleanings to limit any accumulation of grease, which may potentially contaminate foods below and may attract pest activity.
