Observation (CORRECTED DURING INSPECTION): Wiping cloth is stored in water rather than a sanitizing solution. There is a small amount of food at the back of the blade of meat slicer which is currently not in use.
Corrective Action(s): Wash, rinse, sanitize, and air dry the meat slicer after each use. Use a designated brush to get the back of the blade. Store wiping cloth in a fresh sanitizing solution (such as 1 tsp of domestic bleach in 1 liter of water). Post instructions at meat slicer.

Observation: Two mouse droppings noted in the back food storage room on floor. Food is in pest proof bins. Monitoring traps were empty - good. A pest control contract is in place. Back door is closed.
Corrective Action(s): Clean on a daily basis. Continue with your licenced pest control and monitoring. Store food in pest proof bins. Seal any holes where pests may enter. Provide Fraser Health with a copy of your latest pest control report by next Nov 29, 2021 (monday). Premises must be free of pests.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Counters are cleaned and sanitized before use. Floor in back food storage area is new and coolers can be moved for cleaning. Walls have been re-surfaced but have not been sealed. See above regarding pest control.
Corrective Action(s): Follow a routine written cleaning schedule that includes cleaning floor daily in hard to reach areas. Seal walls in back storage/prep room so that they are washable.

Coolers - walk in, 3 upright, and 5 line coolers - are all at 4 C/40F or colder.
Hot holding - steam table - food is at 60 C or colder.
*** Recommend you keep daily records of cooler temperatures. This is to verify that you are following your written food safety plan.
Rice - reviewed procedures.
Quick cooling requirements for hot food: cool hot food from 60-20 C in 2 hours or less and from 20 - 4C in 4 hours or less.
***Caesar salad dressing. Recipe uses raw eggs. The BCCDC recommends using a liquid pasteurized egg for foods using eggs that will not be cooked.
Lettuce and produce is washed on site. Bowls/containers are sanitized prior to use.
Bar has a hand washing sink and there is a hand washing sink with liquid soap and paper towels in the kitchen by the ice machine.
The back food storage/prep room has one large sink. Liquid soap and paper towels are available at that sink as well as at the double sink in the dishwashing area.
A designated hand sink that is easily accessible and not used for dishes or food preparation, must be used by food handlers. Today, hand sink is available. **** Fix dispenser so paper towels can be easily used.
Note that disposable gloves are also being warn. Reviewed requirements for discarding gloves and washing hands when gloves have become contaminated or if switching from raw to cooked foods for example.
Operator/manager has a valid Food Safe certificate.
Sanitizer - 100-200ppm chlorine is in labelled spray bottle.
Commercial dishwasher has a final chlorine sanitizing rinse - 50ppm measured after final rinse - good.
There is a spray sink and 2 compartment sink beside the dishwasher.
Wiping cloth - see above.
Large mixer - can be washed and sanitized in the dishwasher.
Cleaning - see above.
Mechanical exhaust filters are cleaned on Sundays or more often if needed.
Pest control - see above.
Note: Floor in main kitchen is new and the floor in the back food storage/prep room was replaced last week - good.
***** Walls in the back food storage/prep room were replaced last week and still need to be sealed /painted with a washable surface that can be easily cleaned.
Staff washroom has liquid soap and paper towels and hot/cold water. Washroom door is being kept closed.
Keep copies of your food safety and sanitation plans and cleaning schedule on site for next inspection. Update if needed.
Copy of this report left with operator.
