Observation: Mice and probably rat dropping noted (mixed) in whole facility, including shelving units beside sushi bar, back on shelving under clean dishware, on floor , under/behind equipment.
Corrective Action(s): -Full assessment is required by professional pest control to identify all structural deficiencies contributing to the pest problems

** Store any open bags of take out containers in sealed bin also all dishware for customers to be protected. Any foods, spices or open bags of dry goods to be in sealed rodent proof containers.
** spaces under ceiling above dishwashing area - to be fully inspected by pest control

-Bleach solution for wiping rags >100 ppm

Close immediately no take out order. rectify all issues send an email with report and pictures ( correction to noted issues) to the attention of the area inspector to schedule an opening inspection.
