Observation: Cleaning still required:
1) Underneath cooking line to remove grease buildup
2) mopping of pooled water by ice machine area and general cleaning of this flooring area. As discussed previously, flooring in this area will need to be patched or re-done such that it is smooth and easy to clean. Otherwise water will continue to pool, collect, and lead to unsanitary conditions.

Observation: Cooler still not repaired at time of follow up inspection. Operator has indicated that it is being serviced today with new parts.
Corrective Action(s): Do not put any Potentially hazardous food items inside this cooler until it can maintain an internal temperature of 4 deg C or less. Use your thermometer and check the temperature at least once daily.

Comments

Follow up inspection to be conducted to verify that cooler has been repaired and is functioning at <4 deg C. Operator has indicated that flooring options for the ice bin area are being discussed with the repair person. These options will be discussed at follow up inspection. A plan/time frame needs to be put into place for when flooring repairs are to occur.
