Observation: Evidence of pest activity observed in the food premises (Rodent droppings and live flies)
Corrective Action(s): -Operator has already contact a pest control specialist to investigate and manage the pest problem.
-Ensure all foods are kept elevated off the floors in sealed containers (potential food sources for pests)
-Thoroughly clean and sanitize food contact surfaces on a frequent basis
-Deep-clean and sanitize any areas/surfaces where pest activity has been observed (ie. rodent droppings)
-Clean-up or remove food spills/debris and liquids/spills to eliminate potential food sources for pests
-Ensure to comply with recommendations from the pest control specialist re: pest management program

Observation: Various items/equipment (not essential for daily operations) were observed being stored in rooms throughout the food premises. Excess materials/equipment in the food premises provide harbourage areas for pests and can interfere with cleaning/maintenance efforts.
Corrective Action(s): Remove all non-essential items/equipment from the food premises and thoroughly clean and sanitize any areas where rodent droppings and/or pest activity is observed.

- Hand-washing basins are stocked with hot/cold water, soap, and single-use towels
- Refrigeration temperatures are ≤4o Celsius
- Freezer temperatures are satisfactory
- Hot-holding temperatures are ≥60o Celsius
- Quaternary-ammonium food-contact surface sanitizer solution available at 200ppm concentration
- High-temp dishwashers were turned off at time of inspection. Thermolabels provided to operator to verify that final rinse temperature requirements are met/exceeded.
