Follow-up inspection conducted.
Pizza prep cooler has been service. Meat toppings stored in the top inserts had internal temperature of less than 4C. Lower compartment of the cooler had an ambient temperature of 4C.
Inside of pizza oven has been cleaned by staff. Operator is going to have the equipment commercially cleaned removed the excess grease build-up. Ensure the exhaust canopy is cleaned as well.
Operator had review proper time tracking procedures with staff member. As a part of the approved Food Safety Plan for holding pizza less than 60C, proper time tracking procedures need to be followed.
