Routine check.
Coolers (walk in, 3 prep coolers) - good (4 C or colder).
Upper inserts - food temperature (tuna) 4 C/40 F or colder.
Hot holding - soup and rice are at 60C/140F or hotter - good.
Reheating hot food to order.
Produce - all produce is washed (pre-washed or washed on site in sanitized prep sink).
Sneeze guards in place.
Hand washing sink has hot and cold water, liquid soap and paper towels in dispensers.
Non-latex disposable gloves also available.
Quat sanitizer - Automatically dispensed at 200ppm. Test strips available.
Premises is well organized.
FoofSafe Level 1 certification - Supervisor and staff took this year - keep copies of certificates or wallet card on site (to be available during inspection).
Triple sink, commercial dishwasher, prep sink and hand sink available.
Commercial dishwasher has a final hot water sanitizing rinse (178F on the gauge and 169 F measured inside of the machine - satisfactory if >160F inside of the machine)
Covid-19 - masks are worn and a cleaner disinfectant is used on tables and high touch surfaces. Barriers are also in place at cash counter.
