301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): Butcher knife was stored between two prep tables. This is a repeat issues.
Corrective Action(s): Discontinue the practices of storing knives between prep tables - areas cannot be properly cleaned and sanitized. Ensure knives are stored in a clean and sanitary manner at all times.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1) Chemical dishwasher had no detectable chlorine sanitizer. Sanitizer pail has discoloured and chlorine had evaporated.
2) Sanitizer pail in the front customer area only had soap.
Corrective Action(s): 1) Chemical dishwasher must have a final rinse of 50ppm to ensure proper sanitizing of equipment and utensils. Sanitizer pail was changed and solution was primed and was tested at 50ppm to 100ppm. All utensils and dishware washed today must be rewashed.
2) Ensure sanitizer pail at front area is at 100ppm to 200ppm to allow for proper sanitizing of food contact surfaces. Do not mix soap and water. Pail was replaced with bleach sanitizer.

Observation (CORRECTED DURING INSPECTION): 1) A bag of bean sprouts and onions was found stored on the floor.
2) Scoops were stored directly in ingredients.
3) 2 dented cans were found in the dry storage area.
Corrective Action(s): 1) Ensure foods are properly stored off the floor and covered to protect foods from potential contamination. Items were relocated at the time of inspection.
2) Ensure scoops are stored in a sanitary manner to prevent potential contamination of foods. Scoops were removed from ingredient bins at the time of inspection.
3) The safety of dented cans cannot be verified. Items which are dented must either be discarded or returned to the supplier. Cans were placed off to the side to return to the supplier at the time of inspection.

Observation: General cleaning required under equipment throughout the kitchen (old rice, noodles, and rotting chicken under freezers).

-Walk-in cooler was at 4C to 5C - adjust cooler unit to ensure it can maintain 4C or less at all times.
-Prep cooler was at 4C (top and bottom).
-Front service cooler was at 5C (dairy creamer).
-Hot holding was greater than 60C.
-Kitchen upright freezer were less than -18C.
-Chest freezer was at -21C.
-Handwash station shared with 2 compartment sink - supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer pail in kitchen was at 200ppm.
-No signs of pests noted at the time of inspection.
-Washroom clean and well supplied.
