A routine inspection was completed:
- Coolers 4C or colder; freezers -21C or colder; hot holding units above 60C; thermometers present; and temps recorded daily.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- High temperature dishwasher had a rinse cycle temp of 77.9C at the plate's surface as per max/min thermometers.
- Glasswasher had [I2] of 12.5ppm.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups with raw proteins below RTE foods; and foods stored 6" off the floor on shelves and platforms.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good. No signs of pests.
- Valid FoodSafe certified staff present.
- All in order.

ACTION
- Ensure the exhaust canopy is professionally cleaned and service by May 2024.
- The upright cooler, in the waitress area storing pre-portioned condiments, was 12C. Re-check the temperature in 1 hour, if it has NOT decreased to 4C or colder, transfer all foods out of the cooler and store in a working one. Have the cooler serviced and only use when the temperature can maintain 4C or colder at all times.
