Observation (CORRECTED DURING INSPECTION):
- At the time of inspection one quats sanitizer spray bottle quats concentration well over 400ppm while another at 0ppm.
- At the time of inspection low temperature dishwasher 0ppm chlorine during the final rinse cycle. Bulk chlorine bucket empty.
Corrective Action(s):
- Ensure during operation an approved food contact surface sanitizer solution is avaialble for use at all times. 200ppm quats dispensed from the chemical dispensing station into the spray bottles. Clean and sanitizer food contact surfaces on a frequent basis.
- Ensure during operation low temperature dishwasher is fully functional. 50ppm chlorine to be dispensed during the final rinse cycle. Operator has replaced the chlorine sanitizer bucket, primed the machine, and 50ppm chlorine dispensed during the final rinse cycle.

Observation: Some food containers observed stored on the floor and some food containers not provided with proper lids/covers in the walk in cooler.
Corrective Action(s): ENsure all food is protected from contamination at all times. Cover foods with saran wrap or foil, food containers with tight fitting lids and store off the floor. Correct immediatley.

Observation:
- Grease and dust accumulations observed on the exhaust canopy.
- Food debris accumulations observed underneath and behind the shelves in the dry storage room (coverted from a walk in freezer).

- Thoroughly clean all aspects of the exhaust canopy. Correct by October 12, 2022.
- Thoroughly clean the dry storage room. Focus cleaning efforts underneath and behind all shelves. Correct by October 12, 2022.
