New high temperature installed. Final rinse temperature tested at 77c (At plate level) Operator states quat test strips will arrive the same time as the quat sanitizer. Premises will continue to use bleach as a sanitizer in the production area until quat sanitizer arrives. Ensure staff verify the dispenser at the 3 compartment sink is dispensing quat at a minimum of 200ppm at 75F. Monitoring logs being maintained.
