Observation: Dough mixer has been moved to area directly next to dishwasher. Dishwasher is able to spray into dough mixer during operation. Temporarily two large baking sheets have been placed to cover over area where dishwasher can spray. .

Corrective Action(s): This area needs to be addressed. Find a suitable means to protect food from contamination. Relocated dough mixer or have barrier installed to prevent dishwasher water spray from contaminating food preparation area

COMMENTS
- Facility in EXCELLENT sanitary condition - SIGNIFICANT IMPROVEMENTS OBSERVED; EXCELLENT WORK!!! Continue to maintain this high standard of cleanliness!!
- No evidence of pests
- Handsinks adequately supplied
- Coolers achieving temperatures of less than or equal to 4 degrees Celsius
- Freezers achieving temperatures of less than or equal to -18 degrees Celsius
- Dishwasher achieving final sanitizing rinse of greater than or equal to 50 ppm Chlorine at the dish
- Three compartment sink method in use and at concentrations of greater than or equal to 200ppm Chlorine - EXCELLENT WORK!!
- Two functional sink plugs available for use observed
- Raw meat stored away from Ready to Eat food items
- Proper thawing techniques - sauce observed to be thawing in cooler unit
- Hair restraints in use
- Cooler handles and seals in good sanitary condition
- Good hand washing practices observed
- Vegetable choppers in good sanitary condition

NOTE: The facility and staff have demonstrated significant sanitary improvements since the last inspections. Facility was extremely organized and clean, dishwasher was operational and in use, three compartment sink was set up with a chlorine sanitizer solution. EXCELLENT WORK!! Continue with these improvements going forward.
