Observation (CORRECTED DURING INSPECTION): Wall mounted soap and paper towel dispenser at the three compartment sink were empty at time of inspection.
Corrective Action(s): Ensure staff refill soap and paper towel immediately as they run out to ensure proper hand washing between handling dirty and clean food equipment.

Comments

Hand wash stations in the front service area and across the prep table in the back had soap, paper towel, hot and cold running water. See violation code 401 regarding soap and paper towel dispenser at the three compartment sink.
All coolers 4C or less (walk in, under counter, prep cooler..etc)
Walk in freezer -18C and undercounter freezer - 14C
Ice machine was empty and not in use at time of inspection. Ensure ice machine is emptied/cleaned/sanitized regularly (suggsted to be done monthly) when in use and the scoop for the ice is to be stored outside of the ice in a separate container.
General sanitation satisfactory. No obvious sign of pest activity noted at time of inspection.
Quat sanitizer 200ppm at source, in spray bottles and warewashing compartment of sink. Staff appear to be using single use paper towel to wipe. If reusable cloth towels are used, ensure they are stored in a container of sanitizer solution. Do not store reusable wiping cloths on counters.
Manual ware washing procedures reviewed at time of inspection– no concerns. Drain plugs available.
All stored foods appeared protected (ie. stored off the ground, covered, lights in food prep areas had covers..etc)
