Comments

- Hand-washing stations are equipped with hot & cold running water, liquid soap and paper towels
- Manual dishwashing in the 3 compartment sink meets health requirements
- Sanitizer buckets present in multiple locations
- Temperatures of all refrigeration units meet regulatory requirements (<4 coolers, <-18C freezers)
- Raw chicken stored in a separate walk-in cooler
- Consistent temperature log in place
- Hot holding (gravy) measured >60C
- Observed a bottle of buttery glaze that was dated. According to the Standard Operating Practice, the sauce, which contains garlic powder, may be stored in ambient temperature until it is expired (7 days from when it is opened)
- General sanitation is good
- No signs of pest activity noted at the time of inspection

ATTENTION:
- 400ppm QUAT was detected at the sanitizer dispenser and in sanitizer buckets. Utilize the test strip on site to ensure that 200ppm QUAT is dispensed and in use. Use of excess sanitizer requires rinsing to prevent potential chemical contamination of foods
- Ensure to maintain pop machines in a sanitary manner
